TL:DR: If you don't want to get to the technical stuff, basically melee infantry and cavalry suck because their damage output is too low, made worse by the extreme buffs the AI gets in harder difficulties. In previous games, from Total War: Attila and backwards the combat system was such that you were encouraged to have a more balanced army and defeat the enemy through combined arms tactics basically, spamming missile infantry was a much riskier tactic and was much more prone to failure than in Warhammer.
The way the current combat system in Warhammer works basically means that melee infantry and cavalry are largely redundant and not viable whilst the battlefield is largely dominated by missile units and single entity monsters and heroes.
